This post is late for one week because of my busy schedule. My 2nd sis birthday is 1st of June and I decide to bake cupcakes for her birthday. Yess!! today i'm going to share with you guys how to bake cupcakes.
I started with the buttercream Icing or frosting part because I always have no confident about it or it always turn out condition what I didnt expect.
Ingredients for Icing/frosting/topping
1. 110g of unsalted butter
2. 220g of icing sugar (200g is enough for my taste so depends on individual taste)
3. 2 tablespoon milk (up to 4 tablespoon)
4. a few drops of food colouring (i used yellow & green)
5. 1 teaspoon of vanilla extract
Throw Butter and sugar into large bowl and beat together until smooth and pale.
Add 2 tablespoon of milk and 1 teaspoon of vanilla extract. Beat mixture until smooth and creamy.
TADA!!! The colour is so cool right?
Next step is to prepare base cake.
Ingredients for base cake
1. 60g of salted butter
2. 150g of caster sugar
3. 1 egg
4. 20g of cocoa powder
5. 30ml of red food colouring
6. 3 teaspoon of vanilla extract
7. 130ml buttermilk
8. 200g plain flour
9. 1/2 teaspoon of baking soda
10. 1.5 teaspoon of white wine vinegar


Beat butter and caster sugar together until light & fluffy.
Mix with beaten egg into the mixture and beat together.
Mix cocoa powder + red colouring + Vanilla extract to form a paste and beat together with the mixture. In this step, be careful with your clothes because the red colouring will stain your clothes. you may need any old tshirt before you mixing.
Add Flour and buttermilk and blend on high for 30seconds.
Switch off the mixer and add soda & vinegar quickly and mix them with a spoon.
Put into cupcake cases and place in the middle of oven with temperature (170C) bake for 20mins.
After 20mins let the cupcakes to be cool. and decorate with your icing/frosting/topping.
Tada!! I used a few shapes of sprinkles to make it more colourful.
